Andrew (Andy) Feinstein is Associate Professor and Chair of Food and Beverage Management at
the University of Nevada, Las Vegas. He is the co-author of the 6th Edition of Purchasing:
Selection and Procurement for the Hospitality Industry published by Wiley and Sons. This
text has long been the national educational standard and the largest selling text of its
kind in the hospitality industry. He is also the Hospitality Series Editor for Prentice Hall Inc.
His current research includes evaluationing the effectiveness of on-line courses developed by
the National Restaurant Association EDUCATIONAL FOUNDATION and evaluating the effectiveness of
simulation models as Instructional Systems. Andy serves on the board of directors for the
Association of Business SImulation and Experimental Learning (ABSEL) and the Foodservice Symposium.
